Each one is the whole night: the hot food, the drinks, the seudah and the disposables. Delivery, staff and anything extra are settled on the phone.
Candles on every table
Blue velvet to the floor, white chairs, a pair of tapers and a cake on every table before the first guest walks in.
Named, flowered, kept hot
Chicken and vegetable, each under its own card, with the noodles, the kneidlach and the croutons laid out beside them.
Twelve trays, every one labelled
Hot pastrami, beef yapchik, sesame chicken, sauteed liver, potato kugel — the length of the wall, under the flowers, and nobody has to ask what anything is.
Close enough to see the glaze
Blue glass and gold
Gold on the plate, cobalt on the ice, mousse in jars and meringues on the shelf.
Poured all evening
A full bar set against the seforim, everything on ice, and somebody behind it from the first l'chaim to the last.
Down to the last one
A dome cake iced for the simcha, the nosh cart, and fruit carved for the table.
